    GREEN SMOOTHIE BREAKFAST POTS



    The idea of making a smoothie bowl for breakfast may sound a little complicated and time consuming. But with a little advance prep and a few days practice to get you in the smoothie-making zone, these little green smoothie breakfast pots may just become your go-to summer breakfast.

    The advance prep involves freezing the sliced bananas and avocados in advance. However, if you buy them ready frozen all that work is done for you making these pretty much prep-free. You can get both in most supermarkets. If you prefer to buy them fresh and freeze them at home, just make sure to peel and chop them before freezing.

    So a quick word about “smoothie bowl” v “smoothie”! Because in the world of smoothie lovers there is a difference. The former has a thicker consistency and is eaten with a spoon and the latter has a thinner consistency and is drank like a drink! I favour the smoothie bowl for breakfast – just because I can top it with fresh berries, nuts and seeds. But if you are more smoothie than bowl, just add more almond milk to this recipe. If you are making this in a low speed blender you may need to half the ingredients and make in two batches.

    Green Smoothie Breakfast Pots

    (Serves 2-4)

    Ingredients

    2 bananas, sliced and frozen

    1 frozen avocado

    100g spinach

    250ml almond milk (unsweetened)

    1 tbsp nut butter

    1 tbsp honey

    Toppings:

    Choose from mixed berries, chopped fruit, flaked almonds, coconut shavings, seeds, quinoa pops, granola.

    Method

    To freeze the bananas, peel and slice them first. Then place in a freezer suitable container and freeze for at least two hours. As frozen banana will freeze for 3 months, this can be done in bulk and the banana used as needed.*

    For the frozen avocado, peel a fresh avocado, destone it and cut into halves. Freeze in a suitable container for up to three months.*

    To make the smoothie, put the banana, avocado, spinach, almond milk, nut butter and honey in a blender and blend to a thick smoothie consistency.

    Divide the smoothie mixture between four pots and top with your toppings of choice. I like mixed berries, toasted almonds, seeds and quinoa pops.

    *Alternatively, buy the banana and avocado pre-frozen from the frozen aisle section of the supermarket.
