We all know white carbs aren't the best for us with them being processed and causing our blood sugar to spike. I often use wholegrain versions of pasta, rice and noodles. But sometimes, I make spaggetti and noodles from courgettes using a gadget called a spiraliser. This vegetable pad thai is ideal when you want something low in refined carbs and high in vegetables.
