Happy Friday folks. A little Honest Project tradition has developed where every Friday I post a new recipe for a smoothie or juice. I love this as it means I am experimenting with at least one new smoothie or juice recipe a week. For my daily juice, I like to stick to greens mainly so it's hard to come up with diffferent recipes. But for smoothies, I tend to experiment more with different vegetables and fruits. If you find a smoothie you like, it's really easy to fall into a smoothie rut. However, to keep healthy eating exciting and challenging, it's so important to introduce variety and different and interesting flavour combinations. This morning's smoothie is all about beautiful colours and fresh flavours. It contains beetroot, mandarin, apple and ginger and is blended with a nut milk of your choice.
Beetroot is a good course of folate, vitamin C and manganese. Beetroot also contains phytonutrients called betalains, which are understood to have powerful anti-oxidants and anti-inflammatory properties. Apart from the taste and nutritional benefit of this smoothie, it looks so beautiful. The colours are just divine. When you can get this natural vibrant pink colour from beautiful healthy beetroot, why would you even want to use artificial colourings.
1 small beetroot*
1 mandarin, peeled
1/2 an apple
1/2 inch of ginger
1 1/2 cups of nut milk
Place all of the ingredients in the blender and blend until smooth. Best served immediately but it will keep for about twenty four hours if stored in a glass airtight container in the fridge.
*I use fresh beetroot as much as possible. To prepare it, wash the beetroot, chop the ends of either side and discard. Place the beetroot in a steamer over boiling water and steam for about 40 minutes until it has softened. Leave aside to cool and then peel of the skin. I usually steam four or five at a time and then store them in the fridge.
