Recipe: Awesome healthy toasted sandwich



Who doesn't love a good old fashioned toasted sandwich?! They are such an easy and quick meal to whip up. The great thing is that our favourite toastie doesn't have to be made with highly refined white bread, meat, processed cheeses and store bought mayonaise. This awesome healthy toasted sandwich is made using Biona rye bread with mashed up avocado, roasted red pepper, tomato, spring onion and lettuce and seasoned with sea salt and black pepper. I usually roast a few red peppers at a time and keep them in the fridge making this sandwich really convenient to whip up. Just toasted the bread under the grill, spread some mashed avocado over it and then layer your fillings on top. You could also add radishes, sprouts, red onion, cucumber and some seeds. Perfect with a nice cup of tea!!
