The number one question I am asked is what do I eat on a daily basis? I think most people expect my diet to be very restrictive, boring and little uninspiring. This couldn't be further from the truth. I have decided to keep track of my meals on random days every couple of weeks and write food diaries for these days and share them with you. This will answer the question as to what I eat on daily basis and hopefully show that a plant and whole foods diet can be varied, tasty and even exciting.
The first thing to say is that while I eat plant based nearly all the time, on occasion when I eat out I sometimes have a little dairy depending on the menu options and how I am feeling. But for my everyday eating, I stick to plant and whole foods based meals with no meat and dairy and no refined sugar. I don't eat alot of gluten either, but again I might have a little when eating out or if I find the benefits of a certain gluten containing food outweigh the negative affects of gluten. A good example of this is pearl barley. I do drink coffee and try as I might to give it up, I just haven't kicked the habit yet. I am not too worried about this now as I really enjoy my coffee time and don't beat myself up about it. I also have the odd alcholic drink every now and again, but most of the time don't bother too much with alcohol. If I do have a drink, its usually vodka with water and lime or a glass of wine.
So here goes... this is my first food diary of a day in the life of Honest Project eating!! I should say it's from a day a few weeks back when the sun was shining and I always find it is so much easier to eat well and drink lots of juice in the sunshine.
7 am: Up and out of bed. I grabbed a glass of hot water with lemon juice before doing my morning meditation exercise. Ten minutemeditation this morning so not too long at all.
I usually have a shot of wheatgrass before breakfast, lunch and dinner as it's best of have wheatgrass on an empty stomach. So first up for breakfast is a little shot of green goodness. I followed this with a green smoothie made with kale, cucumber, apple, mint, frozen berries, filtered water, turmeric, coconut oil and black pepper served with porridge topped with banana, cinnamon, almond butter and almond milk.
11am: Come 11 o'clock I was feeling a little peckish so I juiced myself a vegetable juice containing kale, cucumber, celery, apple, ginger and lemon. It's best to drink green juice on an empty stomach so I usually have mine either 30 minutes before I eat or two hours after I eat. While I find green juices are great to keep me going in between meals I don't usually drink them as a meal in themselves.
1pm: After my juice at 11am I brought the dogs for a walk in the park. I love this time as Coco and Teddy get super excited when it comes to walk time. I think daily exercise and calm time are both vital to my wellbeing so I find a walk with the dogs ticks both these boxes. After my walk I am ready for lunch. It was a really warm day so I had lunch outside. I had a green lentil salad made with spring onion, tomatoes, cucumber, carrot and lots of sprouts. I dressed it with olive oil, lime juice and salt and pepper.
6.00 pm. I used to always have dinner quite late, usually between 7.30 and 8.30pm. Now I much prefer having it around 6pm. Of course this totally depends on my daily schedule. This day I had one of my all time favourite dinners, Thai red vegetable curry. It is so yummy. I was a bit low on vegetables so I used a red pepper, onion, potatoes and frozen peas and corn. Usually I would use courgette, mushrooms, butternut squash, baby corn and green beans. I served it with brown rice and toasted cashew nuts.
I love a cup of herbal tea at night time. Its so relaxing and helps me unwind before bedtime. On this day I had camomile tea with a raw cacao energy ball. It's my version of tea and chocolate, but in a very good and healthy way.
